Well, forget that. Orange and white chocolate is where it's at.
'No!' I hear you cry. But sadly, when one forgets one's cranberries somewhere (there's a strong possbility I left them in North Wales) and it is raining very hard outside, one must make do. I'm sorry cranberries, but you just got cuckolded.
These are the chewiest, biggest and fattest cookies to come out of my oven. They're moreish, about the size of my face and I just can't stop breaking bits off them. The orange is strong but perfectly mellowed by creamy white chocolate. Yum yum.
White chocolate and Orange cookies
300g sugar
(a mix of brown/white- I used 200g light brown and 100g golden caster)
170g butter
250g self raising flour
1/2 tsp salt
2tsp vanilla extract
1 egg, 1 yolk
(or do as I do and use 1 fat duck egg)
200g white chocolate chips
Zest of two oranges
1. Preheat oven to 170 degrees C
2. Melt butter with the sugars. Let it cool.
3. Add vanilla and egg (or egg + yolk, but duck eggs are what the cool kids are using. Just ask James Martin). Whisk like mad for at least a couple of minutes, or until you get bored and the mixture looks light and lovely.
4. Drop in the flour and salt and fold it in.
5. Add in the chocolate and zest, but try not to stir it too much, or you'll empower the flour (ooh, rhymes!), and that tends to mean tough cookies.
6. Bake heaped tablespoons of the mixture for about 15 mins. The cookies are very soft when they come out, but they firm up plenty, with a beautiful crackle on the surface. Only bake 3-4 per sheet, these babies like to spread it around when they get hot!
Awkward segue into other exciting stuff going on in my life!
As you might have seen from a quick gander at my sidebar, I've been busy. Most exciting is the Cookie Swap- I'll be sending cookies to three other bloggers and recieving three boxes of cookies back. Might need some help to to nom down all the posted goodies, as well as my multitude of practise bakes! Join in, why don't you?
Lastly (phew!), you know how everyone has a 'You know Christmas is coming when...' moment? Well, mine is when I can buy delicious honeyed, spiced pecan nuts from a little pretend German log cabin in a Christmas market. And voila!
Christmas must be soon, after all!
See you soon, thanks for stopping by :)
